Fancy this for a mid week supper? I can tell you that it tastes equally as divine as it looks and made an appearance on our dining room table last week. Needless to say, as with any finger food, the kids adored it (the state of their tomato smeared faces afterwards would indicate this). As it’s such a great meal to enjoy over a discussion of the highs and lows of everyone’s day, we allow them to eat pizza without a knife and fork, in my opinion, as it always should be for optimum pleasure.

This particular execution was adapted from Jamie Oliver’s ‘American Hot Pizza Pie’ recipe to be found in ‘Save with Jamie’/JamieOliver.com. The meaty, cheesy heaven also has a good kick behind it, so if you like your chilli, you can go as crazy as you like with the jalapeños!

As you will know, Jamie’s latest book is all about educating us around creating fantastic dishes on a budget, and best of all, saving us a few quid. So far, it has certainly done that and this was no exception. We made his ‘Mothership Sunday Roast Pork’ (another firm favourite in our household) and froze the leftover meat for another day. I have to say, that Pork shoulder was even tastier the second time round and made a jolly flavoursome component for this glorious pizza. To be fair, the star of the show if you ask me, with the quality of the meat making all the difference.

We decided to make a slight variation from the recipe, as we have found a much loved basic pizza dough (using Semolina flour) and tomato sauce in ‘Jamie’s Italy’ that we thought would compliment the toppings well (please refer to the book page 52/59 or online on Jamie’s website here for the ingredients and methods). To compile this you will need leftover cooked Pork or sausages, red onion, a jar of pickled jalapeños, Cheddar and/or Mozzarella, Fennel seeds and Smoked Paprika) and the end result was exactly what we had hoped for…

Beautifully succulent Pork, a bite from the chilli, slight sweetness plus crunchiness of the red onion, all coming together with the oozy-ness of the Mozzarella and a tang from the Cheddar. You really don’t want that unavoidable ‘last bite’ moment to arrive. I’m already thinking about my next one. Perhaps with the pizza pie base for a change.

What more could you ask of a pizza? I think he’s nailed it with this one. I urge you to try it for a flavour explosion that is out of this world…and fabulous to share.
